Do you remember playing under the kitchen table when you mother was baking cookies, and that fresh baked smell filled the room? Then seeing her set down and take a break with a cup of coffee that she dripped on the stove.  And you know this was only after she saw that you had your cookie.  When you brew this coffee and take that first sip, try to remember. 

Now a little history: The almond cookie is believed to have been derived from the ancient Chinese walnut cookie which was thought to bring good luck. The almond cookie originated when Chinese immigrants came to the U.S. in the mid 1800s, and the walnut was replaced with the almond.
