Spinkle meat generously with Cajun meat seasoning and rub into surface. Let stand 5-10 minutes before cooking. Broil or Barbeque as you like.

Coat both sides of meat with seasoning. Melt butter in a large heavy skillet over high heat. Add meat immediately. Blacken on both sides, over high heat. Reduce heat and cook until done to taste over medium heat.
